The Chef De Partie will assist the Sous Chef to oversee the preparation, cooking and
presentation of meals in the Kitchen and supervision of staff in the overall food production process.DUTIES & RESPONSIBILITIES: Ensure the kitchen is maintained clean at all times through the continuous practice of clean as
you go policy.
You will be required to observe very high standards of cleanliness and hygiene as well as ensure
all your subordinates keep these standards at all times.
Ensure menu planning and writing of a 30 day menu for both continental and local dishes.
Ordering supplies from the stores and ensuring adherence to costing requirements.
Supervise the packing of food and serving/presentation of food at the restaurant.
Supervise and ensure food is cooked and served in a timely manner at all times.
Report to your supervisor any accidents or potential accidents that may occur in the kitchen.
Help reduce any wastage or spoilage that may occur in the kitchen and support the General
Manager of Operations in maintaining the required food cost level.
Monitor the presentation of breakfast buffet table (fruit/cereals) in all dining halls/restaurant and
improve on the presentation with the use of garnishes, exciting presentations and initiatives.
Review the breads put out and improve on the daily varieties.
Ensure that there is sufficient freshly squeezed fruit juice at all times during service.
Monitor the presentation of the cold cuts/salads/sweets buffet table and improve the
presentation with more color and garnishes;
Monitor the salads and provide variety and better presentation.
Ensure that all food products are dated, covered and labeled correctly and stored at the
appropriate location or storage areas.
Ensure there is deep/effective cleaning of all kitchen surfaces and floors at all times according
to the standard laid out by the company by using the correct chemical required.
Knowledge of FIFO/LIFO practice in kitchen operation.
All staff are trained to be service orientated and regular meetings are held with staff to reinforce
service issues.QUALIFICATION1. Must have at least HND in Hospitality Management or Diploma in Hotel Catering &
institutional management or any other related field.
2. Culinary training will be an advantage.
3. Must have excellent knowledge of FIFO/LIFO practice in kitchen operations.
4. Must have knowledge in various cooking methods.
5. Must be able to coordinate with food service teams of the Food & Beverage department and the
Butler services department.
6. Must have excellent communication, interpersonal and reporting skills.
